Extra Virgin Olive Oil
Slice the eggplants into thin slices, as thin as you can comfortably get
Salt them, and let them sit for about 30 minutes to an hour, this will help with the bitterness.
Now with salt, your better off using sea salt if you can get it, and you don’t need a lot just a sprinkle over them.
After the time is up, pat them dry, and lay them on a baking sheet, and then drizzle with some extra virgin olive oil, you can use other oils if you want, but keep in mind other oils are not as healthy and can turn this into a bit of a mess.
Put them into the oven at 350 and watch them, you just want them to brown a tiny bit, not for very long.
Turn them over until both sides are lightly browned.
Now mince up some onions and caramelize them with some olive oil now add the lamb, toss and then it regularly until it browns, and now time to add some spice.
Oregano Pepper Cinnamon Nutmeg and Paprika.
Make sure its mixed in with the lamb as best you can.
Stir in some red wine, not a lot just a bit, and if you don’t want to use wine, try using grape juice, that will work too.
Now add in some canned tomatoes, and mix it in with your meat sauce.
Canned tomatoes seem to have a healthier build then regular tomatoes that have the nutrients sucked out of them and thus canned is much better.
Add a little beef broth and simmer on mid to low heat for about 30 minutes.
Slice up some potatoes and leave them slim sliced and boil until soft and breakable.
Now For The Cheese Mix
Wisk the eggs Greek yogurt and flour together, then add both cheeses to the mix.
Now Assembly Time!
Take a baking pan and lightly oil it
Layer the egg plant on the bottom and be sure as you can see no space, think of this as egg plant lausuna.
Add the meat sauce to cover the egg plant.
Add the potatoes on top of the meat sauce, this can be a thin layer, you don’t want too much starch.
Lightly sprinkle some bread crumbs.
Finally cover it with the cheese mix, now this is up to you, there is no such thing as too much cheese.
Bake at 350 degrees for 45 minutes, and then take out and let sit for 5-10 minutes.
It should just start getting a golden brown top at the end. And you can add some parsley or green onion on the top to serve.
To serve I would suggest having some salad and some rice with it on the side.
This should be a much healthier meal, good comfort food, and tastes amazing!
