Apple Risotto is a great healthy dish, done in moderation, and easy to make and also very tasty, my recipe is a bit different than most, but will yield a good taste, with a healthier way to make it.
I cook this slowly, but trust me you can make a big batch and have enough to eat for a week if you want to.
I am also going to use normal rice, I prefer long grain myself, and use a pretty big wok, you can change a lot of the ingredients or add to if you want.
Traditionally people like using bacon, but I don’t because again, I’m trying to make this healthy.

Boil your chicken, now breasts or full chicken, just make sure to take the bones out, you can lightly spice it, some pepper, lemon spice.
The chicken should be fully cooked,and then chopped up into small pieces.
Now for the garlic and onion and apples, they should be prepped first, makes things go easier.
The garlic, onion and apples should be diced pretty small, (You should have an extra apple or 2 for garnishing at the end.
In a large wok, put in a bit of olive oil, heat it up really good.
Put in your minced onions, and wait til they start to caramelize.
Add some garlic now, and the the chopped apples.
Now its time to work on the sauce.
Make some Earl Grey Tea, or another type if you fancy it.
When done put it into a cooking pot, add some cooking wine (or real or fake, or even grape juice.) then your apple juice, and a very small amount of cranberry juice, this is strong and we don’t want it to be a feature flavor, lastly add some nutmeg, its always a prime spice for apples, just enough for it to do its job.
Stir this often until it comes into a boil, and your done, take it off the heat.
Now make up your rice, don’t add salt, its not needed, maybe a bit of butter, but really I don’t use it at all.
When the Rice is done, we are going to start putting into the wok with the apple, onion, garlic mix, let it cook slowly, and what your going to do is mix in some of the sauce mix a bit at a time until the juice seems to be dissolving into the rice, and then add a bit more over time.
With in an hour your sauce should have disappeared and dissolved into the rice and your done.
On a Bowl place your serving on it, and then have some sliced green onion on top, and 1 small uncooked apple slices on top.
Now put some chicken around the side of it.
If you have left over the sauce you can lightly drizzle it over.
This should be a very healthy dish, should taste great no added sugar or salt, but still has enough of it naturally, and will make you look like an awesome chief!
