One of the most important staples of our cooking is sauce, with out it, our food tastes bland, doesn’t have any zing and really doesn’t leave a memorial experience.
Sometimes when we are cooking we are not just cooking for the sake of eating, we are cooking to show off, to give an experience, to show our love, to make people impressed with our skills!
The difference between a level 1 and a level 2 cook is quite simple, a level 1 is a home cook, often feeding the family, and is not cooking because they want to cook for fine dinning or show off, they are cooking because its dinning time for the family, they work, and its just dinner time, a level 2 is doing it because they want to put more effort into it and put more love into it, its not just about the eating, they want people to have an experience.
When someone eats your meal, you want them to go wow, that was amazing, how did you do that, you want them to have an experience that leaves people impressed.
What is one of the best ways to impress? Sauce.
You can go to your local grocer and pick up a bottle and its easy, and yes it tastes good, but when people know its from a bottle, it looses all wow vaule.
Most of them are made with sugar (Remember the largest amount of the ingredient is always on the top) modified corn starch, what is that? Modified? seriously, and coloring, and this if you think about it is something you use a lot of.
Couldn’t you do this yourself? Couldn’t you think of a way to make a sauce with out sugar? I do it all the time, and honestly It still tastes really good.
In fact, 99% of the time when a sauce recipe calls for sugar I add none, and no one seems to notice.
So lets take some time to consider how we can change this up, to me, spaghetti sauce and pizza sauce are 2 sauces that are very similar and can be changed up and used for both things, so what do we do?
Well #1, your not going to buy a can or bottle of spaghetti sauce, what a waist of money, and time, sodium sodium sodium!
This is rather simple, you start with some extra virgin olive oil and some chopped garlic and some chopped onion, let it cook a bit, and this will give your oil a bit of flavor to it, then add a few cans of tomato sauce and tomato paste put your favorite spices in, and let it go to bubbling, then take it off and let it sit for a bit.
There you go, no sugar, no salt (you can add some, but at least your in control now, and you have a good rich sauce, and by using canned tomatoes it will have a much richer healthier flavor, and whats that? No added garbage.
