So this is a personal challenge for me, I have a friend who is on a Keto diet and she has been missing out on having “real food” what is real food any ways, I mean, we all have times when we have to go on a diet, and we need to get our bodies in tune.
This doesn’t mean that we have to suffer with out the things we like, so she wanted to have a burger, so, unfortunately she can’t have a typical beef burger, but there are work around, and who knows maybe this is a better one, this I believe is time consuming, but I think at the end of the day, its well worth it.
So where do we start? Well a burger is no burger with out a bun, so lets start there.
3 tablespoons of Almond Flour
1/2 teaspoons Baking Powder
1.5 tablespoons extra virgin olive oil
In a small cereal bowl mix the baking powder and almond flour, make sure there are no clumps
Add the oil and egg, and you want to beat on it like your making an omelet, take a fork to get all the clumps out.
This is one of the few times that I will tell you to use a microwave, but microwave it on high for 90 seconds, there you will have the perfect Keto Friendly bun, let this sit for a few minutes then take it out and cut down the center, done!
This part shouldn’t take more than 2 minutes!
The Burger should be easy enough, keto allows for meat, but I would suggest because it is for a dietary pourpose to use extra lean, and to make patties just take some meat into your hand and just mold it with your hands until it done.
Cooking the patties shouldn’t be overly complicated just a bit of salt and pepper, shouldn’t need much.
Now for toppings.
Lets make some homemade Salsa.
2 Green Peppers
2 Colored Peppers
1 White Onion
2 Cloves Of Garlic
A few green onions
Chop everything up aside from the lime mix really well, and then spray the lime juice over everything, and sit in the fridge for now.
Now for the fries, I’m sorry a burger aint no burger with out fries.
So lets make some Cauliflower Fries.
2.5 pounds of the heads of cauliflower
2 Large Eggs
4 Cloves of chopped garlic
Extra Virgin Olive Oil
I will break this down to different steps, its quite the undertaking.
Cut the cauliflower into medium size florets and process through a food processor, you want this to go much like rice grains as much as you can. Put everything into a large pot, and sprinkle with salt, and cook over medium to high heat, keep stirring until the mixture is wet and soft, should take about 30 minutes. Reduce the heat if it begins to brown, then remove from the heat to allow the cauliflower to cool.
Take the cauliflower out and using paper towel try to squeeze as much liquid as you can, when done, put it in the microwave and heat it up for 1 minute, this will help a lot.
Preheat your oven to 350 degrees, and line a large baking pan with parchment paper (This is easy stuff and it doesn’t stick.) and lightly brush the parchment paper with extra virgin olive oil.
Add your eggs in to a large bowl, add your garlic, oregano, pepper and cayenne pepper, (A lot of this is to your taste, obviously you need to control the cayenne pepper to give it as much heat as you want, heck you can add other spice to if as well if you want it hotter, then mix it all together really well, now put your cauliflower into the mixing bowl, add your cheese and mix it good, (if you don’t mix it enough it just won’t have the right taste. Transfer everything to your prepared baking dish and tamp it down and make everything even and smooth.
Bake in the preheated oven until deeply golden brown for about an hour. Let it cool in room temperature. Put it in to the fridge to chill, for about 3 to 4 hours.
Preheat the oven to 400 degrees, again with a baking sheet lined with parchment paper with olive oil spread over.
Put the cauliflower into the baking sheet that you just prepared and cut them into the shape of fries, make sure they are not touching themselves sprinkle with olive oil and dust them with some more cheese.
Bake in the preheated oven until deeply browned, should take 20-25 minutes, take it out and allow it to cool off a bit before serving.
Putting everything together.
we all know how to put together a burger, but where this is Keto lets not bother with ketchup or mustard, we are going to put our homemade salsa on it, then some onion and a slice of cheese (And no not a Kraft slice, a slice that you pre cut from a block of cheese.)
And for the fries one last thing, lets make a special mayo sauce, sorry lets have some taste.
lets take a small bowl add some mayo to it, a little hot sauce and a small drab of Ranch Dressing, Or you can go to the health isle and buy some sugar free ketchup, yes you can get it, yes it is costly, and yes it is Keto Friendly.
