Spaghetti Squash Pad Thai is an excellent and nutritious and creative way to have a meal, if you need something with out carbs, or something that is more nutritious and very tasty then cooking with Spaghetti Squash Pad Thai is very good, what tops it is the fact that one spaghetti squash gives you a lot of noodles.
1 Spaghetti Squash
Extra Virgin Olive Oil
(What ever spice you like)
Some Hot Chilli Sauce
Veggies of choice
1 White Onion
Cut your Spaghetti Squash into 4 sections, be very careful and use a very sharp knife for this, you will need to deal with a very hard squash.
Take a spoon and clean the insides the same way that you would a pumpkin, you can roast the seeds if you want.
Take the sections of the squash and spread a little oil over the top and bottom.
Salt and pepper it will and put it on a baking sheet and bake on 350 degrees in the oven, turning over half way through.
Once they are out,let them sit for 10-20 minutes, maybe even a half an hour, they will be hot, so you need to be careful.
Once they cool down enough take one to the cutting board, and take a fork to the insides and start pulling the strands out, this should come out nice and easy and wow look at that, looks like actual spaghetti!
Set this aside for now and take your veggies and go to your wok or frying pan.
Start with some extra virgin olive oil, and heat it up and then start to caramelize your onions a bit, then start adding your veggies, (Personally just to warm up not to totally cook)
Near the end put in a few spoon fulls of peanut butter, and let that melt along your veggies, and then add in your Spaghetti Squash
Then just before your done poor in a bit of chilli sauce, and your done.
I hope you like this, this should be an awesome dish, yes it doesn’t taste quite like spaghetti but it still tastes great and even has a lot of health value for you.
