Stuffed Peppers

Stuffed peppers are so easy to make, but yet can impress people and look like a 5 Star recipe, trust me if your single and want to impress someone this is your dish, its amazing!

Phase 1 Ingredients

4 Sweet Peppers
Ghost pepper sauce
Sweet Thai Chili Sauce
Tomato Ketsup
Apple Cider Vinegar
Korean wing sauce
2 Cups of rice
2 TBS Smoked Paprika
3 Spoons of garlic paste
3 Chopped up onions
3 Spoons of ginger paste
1 Pack of ground chicken
3 Carrots food processed
1 Can of olives food processed
1 Block of cheese of your choice
8 Sweet peppers

Phase 2 Instructions

In a small bowl, add ghost pepper sauce, tomato ketsup, add some apple cider vinegar, sweet thai chili sauce, korean wing sauce, add some smoked paprika, mix well, and sit aside.

In an oiled frying pan, put your onions, add your ginger and garlic paste, keep mixing it in, add a pack of ground chicken (You can use something else if you’d prefer) make sure your meat is fully broken up and cooked, Add your carrots, and now your olives, and start adding your rice, and make sure you mix it all in, and add your cheese, and then mix your sauce.

Cut your peppers at the top, clean them out, and then put your mix in, stuffing them completely full put the tops on

Preheat your oven to 350 degrees and then bake for 20 minutes

Pinapple Fried Rice

We absolutely love Pinapple fried rice, it tastes amazing, and is a wonderful side dish, or even a full meal.

Phase 1 Ingredients

4 Sticks of Celery Chopped
1 Green pepper chopped
3 Onions chopped
3 Cloves of garlic chopped
2 Tomatoes chopped
4 Cups of rice made
Rice wine vinegar
2 Cups of chopped pineapple
2 TBS of soya sauce
3 Chicken breasts cubed
1 TBS spiced rum
1 TBS of white pepper
2 TBS nutmeg
1 TBS of oregano
One thing of green onion

Phase 2 Instructions

Make your rice the night before, over night is the best.

In your wok add your onions, and start to cook these down add your garlic, Add your chicken, pour in your rum, when the chicken is white an done, start to put the rice in, now add in your veggies, and stir in, now your rice wine vinegar, nutmeg, oregano, and finally your pineapple, make sure you stir everything., and then top with green onion, this is super easy, and tasty, and didn’t much effort!

Burrito Bowl

Burrito Bowls are great, they are an amazing thing to sit down and share on a cold day, one of my favorite Mexican dishes and I believe everyone can enjoy this, yes, it does take time but not something you need to have a lot of skill to make, just time!

Phase 1 Chicken

Chunk up some boneless chicken breasts, you can use chicken thighs if you’d prefer.

Mix in 2 spoons of minced garlic, some liquid smoke (You don’t need a lot, or it will taste like a shoe.)

Lots of black pepper, some Lime juice, some honey, Paprika, onion powder, and some ground cumin.

Lets this marinate covered for at least 2 hours, for best results, 24 hours.

We used the slow cooker to cook this over 6 hours on low with a bit of wine, and apple cyder vinegar and some water.

Phase 2 Mexican Rice

Take a strainer and put in 2 cups of rice and rinse until the water is clean, this will clean the starch off of your rice and then make it, we used a slow cooker.

We then used a wok to cook the rice mix.

1 Onion and Jalopino put through the food processor and then added to the rice

We used 2 cans of drained corn into the rice.

And some lime juice and then a can of crushed tomatoes.

Mix this well and cook well.

Phase 3 Black Bean Mix

We put 2 onions in a food processor, and then to the frying pan we added 2 cans of black beans, and no we did not drain them we want the liquid, and added some paprika, pepper, cumin and garlic and cooked this till the beans were nice and hot.

Phase 4 Chipolete Mayo

In a food processor we added 3 cans of chipotle peppers in adobe sauce

In a bowl with your now pureed chipolete we added some lime juice, mayo (no miracle whip guys, please.) some sour cream, apple cyder vinegar mix well.

Phase 5 Plate

I would take a huge plate, and a very small bowl, in the small bowl put your mayo in and set in the center of your large plate, and then add every piece of the meal and display well

This is a great meal, you can make guacamole and add lots of different things to it, make it your own, burrito bowls are an amazing treat, and yes they do take some time to make, but its worth every moment, I know my wife loves it!

Chicken Biryani

Do you like Indian food? Do you like it hot and spicy, do you want a taste of something authentic Indian? Chicken Biryani is one of the best dishes you can make, and it tastes amazing, and is super easy and simple to make!

Phase 1 Biryani spice mix.

In a small bowl (Or re usable container you can store spices in mix some

  1. Cuming.
  2. Coriander.
  3. Ginger.
  4. Tumeric.
  5. Cinamon.

Mix that together.

Phase 2 Cube the chicken.

Cube up some chicken breasts, or chicken thighs, either works well, chicken thighs offer more fat and gives a bit more flavor, but breasts will work well too.

Phase 3 Prep work.

Cut up some ginger, and 4 onions and a few cloves of garlic and have 2 cups of rice made on stand by.

Phase 4 Cooking.

  1. Fry up and caramelize 4 onions and garlic.
  2. Add chicken cubes make sure its cooked down, no raw chicken.
  3. Add the spice mix.
  4. Mix everything very well.
  5. Add plain Greek yogurt.
  6. Add a can of crushed tomatoes, you can use tomato soup if you have that.
  7. Add a bit of water, and keep mixing well.
  8. Add some chili sauce.

Serve on top of rice.

Orange Chicken

Orange chicken is a great and healthy meal, very easy to make and is a crowd pleaser!

It does take some time to prep for, and unlike the meal you order from your favorite Chinese restaurant this isn’t deep fried so tends to be a lot healthier, and yeah it packs a punch and tastes amazing!

For the chicken you can go with a whole chicken, chicken breasts or chicken thighs, any would be a great choice!

Phase 1 Broccoli

Cut your broccoli to just heads and cut it down to the size that you want it to be. take a frying pan and put some water in it, enough to cover your broccoli and start to simmer it until the broccoli is nice and soft then drain it and rinse in cold water so that it stops cooking put it into another container with cold water and set aside.

Phase 2 Chicken

Cut your chicken to small bites, pepper it, (if you want salt use that, but we recommend you use Lo-Salt or a low sodium alternative.) and put in corn starch mix together well, in a frying pan with some extra virgin olive oil fry the chicken up until fully cooked then drain your broccoli again and cook it a bit more with the chicken and then set aside.

Phase 3 Orange Sauce

Ingredients

  1. 2 cups of orange juice
  2. 2 table spoons of corn starch
  3. 3 cloves of garlic
  4. 2 table spoons of ginger
  5. A splash of rice wine vinegar
  6. Some honey to taste
  7. Some soya sauce (We like sweet soya sauce)
  8. The orange rind from 1 orange

In a pot on a burner set to medium high add each ingredient one by by one stirring after adding aside from the orange rind, do not add that yet but take your time and stir each ingredient in so that its incorporated once done, cook down for another 5 to 7 minutes until it reduces, then take it off of the heat.

Now mix in the orange rind and stir again, then pour it over your chicken and broccoli mix, now stir in the sauce with the rest of it, and your done, this is best served with cooked rice, you can go all fancy and make some stir fried rice if you wanted to as well!

We hope you like this and enjoy it, and some take aways, is that we don’t need salt (I don’t use any unless its a no or low sodium alternative, honest is a good replacement for sugar, its natural and better for you.

Rinse your rice, cook it and let it sit in the fridge over night for better results.

Chicken thighs offer more fat and better flavor, however chicken breasts are far more healthier, and some times you can get a whole chicken cheaper and would work better, you do have options, so take some time and think about it.
