Mexican Casserole

This is an easy fun, yes it takes time, but its well worth it, and an amazing meal!

Phase 1 Ingredients

1 Bag of avocados
3 Large white onion in a food processor
1 Can of crushed tomatoes
1 TBS quac spice
1 TBS Mexican oregano
2 TBS garlic powder
2 Diced up green pepper
5 Sticks of celery diced
1 Can of corn
3 TBS tajin
2 Packs of extra lean ground beef
1 Can of re fried beans
1 TBS of garlic salt
2 Cups of rice, already cooked
1 Can of crushed tomatoes
1 Block of cheese, graded up
1 Container of sour cream

Instructions

In a large bowl have your bag of advocado peeled and cut, add 2 onion add the crushed tomatoes, mash and mix everything, some quac spice, add the mexican origono, garlic powder, you want to use a potato masher, and mash and mix well.

In a big casserol dish pour the mix in and pat it down.

Fry some green pepper, celery, corn, and mix some tajin in with it, it doesn’t have to be completely soft, but soft enough, and then add to the Quac mixture packing it down, add 1 can of refried beans, add in 1 TBS of Mexican oregano, 1 TBS of garlic salt

Fry up your beef add in 1 diced up onion, add in 1 TBS garlic salt, add in your rice, amd add it in to a second cassarole, and then 1 can of crushed tomatos.

Add in some diced up cheese, add in to sour cream you can add some Quac into this if you want.

To serve this take some scoops of each casserole and put it into a container and pour your quac mix on top.

Pinapple Salsa

Phase 1 The Ingredients

  1. Tajin
  2. Ground black pepper
  3. Lo Salt, or NoSalt
  4. Smoked paprika
  5. Onion
  6. Red Pepper
  7. Cilantro
  8. Pinapple (Not canned)
  9. Tomato (Not canned)
  10. Lime
  11. Jalopino (Your choice if you want seeds or not)

Phase 2 Cut them up.

Cut all the vegetiables up, dice them up nice and small, with the Jalopino you don’t have to have the seeds, but if you want the extra spice you can.

Phase 3. Mix.

Mix all the veggies up Add the spice

Now crush the juice of a lime in to the mix, and give it its final mix.

Phase 4. Fridge

Put it in the fridge for an hour or 2 and then your ready to serve!

We find this to be a super easy and fast recipe to make, we think you should enjoy this, let us know what else would you mix, you can put tomatos, you don’t have to, but you can. Note, some people do add vegetable or olive oil, but becareful of that, as it does add celeries and fat.BB

Chili Burrito

Ever try Taco Bell and get disappointed? Too salty? To mushy, well it sounds to me as if someone needs to make their own, well, we did too, and this turned out amazing, and honestly it was quick simple and easy, very little effort and trust me it turned out amazing!

Phase 1 Chili Time!

Oil your pan lightly
Add in some ground beef
Add in 1 large or 2 small onions diced up
Break burger up so its very small
Keep mixing the burger and onion.

Add the following spices to your own taste
Mexican oregino
Ground cuming
Ground black pepper
Smoked Paprika and Onion
Chili powder
Mix the spices up fully and ensure that all your meat gets some love

Add a few drops of apple cider vinegar

Add 2 cups of water

Keep stiring as you add ingredients

Take a glass and add some corn starch in to make a slurry to thicken your sauce and add it to your mix

Cover and simmer for 5 minutes

Add 1 can of refried beans

Add 1 can of tomato paste

Add some adobe chipolte peppers (preferably diced up, if not, take some time and dice the peppers up first.)
If you can’t handle heat then please do not add them.

Let simmer for 10 minutes

Shred up half a block of cheese, (Do not buy pre shredded cheese, as it has a higher melting point and is has lots of chemicals and is not as good quality, or even better yet buy some higher quality cheese!)

Start slowly adding the cheese into the mix until cheese is melted, and then add more until its completely melted in.

Take it off the heat.

Phase 2 Serving

Take a tortilla wrap

Add some of the mix in the middle, add some sour cream, even better yet, Mexican sour cream, and then wrap it up, and serve it!

Mexican Street Corn

Mexican Street Corn

This is an excellent snack, it can be un healthy, and quite hot if you let it be, and you can customize it the way you want, in this recipe I am making a simple base, yes there is a bit of addition to mine, but not a whole lot, we are trying to present this in a healthier way so we are avoiding doing the butter (Yes I am aware that it does add to the flavor, but its unhealthy and I’m not sure its nessasary with all that we have in it already.

Phase 1. Corn

Cook your corn, its normal to use white corn, however not everyone can get access to it, we couldn’t find it at all.

If your using canned corn drain first, other wise cook your corn, we used a bit of low sodium salt, so me peper and tajin.

Let your corn cool off before proceeding.

Phase 2. Putting it all together.

This was easy wasn’t it?

Put some corn in a cup, now presentation is not important, not everyone will care that much.

Put 2 spoon fulls of cream cheese.

Put 2 good squirts of mayo. (Please do not use Miracle Whip)

Put a bit of lime juice over it.

Put some of your favorite hot sauce, we used Franks Sweet Thai Chilli, my absolute favorite!

Then finally add a few sprinkles of Parmesan cheese and thats it your good to go!

This is a great little snack, very tasty and easy to make, a good pleaser, we hope you enjoy it!

Chickpea Scrambled Egg Breakfast

Anyone with any health issues should respect Chickpeas as they are some of the most amazing things you can eat, they help you a lot, they helped me get my A1C perfect the last few quarters, so they are really good for you. Chickpeas are good for you to the fact they will fill you up and not leave you feeling hungry, while offering a lot of nutrients and are truly one of natures miracle foods.

Waking up to this in the morning is an amazing thing to wake up to try it! Believe me this doesnt take very long.

Phase 1 Ingredients.

  1. 4 Eggs
  2. Garlic Powder.
  3. Cheese.
  4. Lime Juice.
  5. Black Pepper.
  6. Stir Fry Sauce.
  7. Smoked Paprika.
  8. Bamboo Shoots.
  9. Apple Cyder Vinigar.
  10. Tomato Paste.
  11. Ginger and Garlic Paste.
  12. Green Beans.
  13. Water Chestnuts.
  14. Onions.
  15. Canned chickpeas.

Phase 2 Cooking.

Oil a frying pan and add your veggies, keeping in mind you want to constantly stir as you add.

Add lots of black pepper.

Add some apple cyder vinegar.

Add some lime juice.

Add your spices.

Add in your drained chickpeas.

Add in some of your stir fry sauce (Not important brand or type, just something you like.)

Let this simmer for a bit, then add your eggs and scramble them in going even through out the dish.

Add cheese to it.

Finally add some tomato paste, and mix well and get this simmering, and your ready to serve into some bowls!

This is a super easy and fun dish to make, and trust me it is filling and your body will thank you for it!

Burrito Bowl

Burrito Bowls are great, they are an amazing thing to sit down and share on a cold day, one of my favorite Mexican dishes and I believe everyone can enjoy this, yes, it does take time but not something you need to have a lot of skill to make, just time!

Phase 1 Chicken

Chunk up some boneless chicken breasts, you can use chicken thighs if you’d prefer.

Mix in 2 spoons of minced garlic, some liquid smoke (You don’t need a lot, or it will taste like a shoe.)

Lots of black pepper, some Lime juice, some honey, Paprika, onion powder, and some ground cumin.

Lets this marinate covered for at least 2 hours, for best results, 24 hours.

We used the slow cooker to cook this over 6 hours on low with a bit of wine, and apple cyder vinegar and some water.

Phase 2 Mexican Rice

Take a strainer and put in 2 cups of rice and rinse until the water is clean, this will clean the starch off of your rice and then make it, we used a slow cooker.

We then used a wok to cook the rice mix.

1 Onion and Jalopino put through the food processor and then added to the rice

We used 2 cans of drained corn into the rice.

And some lime juice and then a can of crushed tomatoes.

Mix this well and cook well.

Phase 3 Black Bean Mix

We put 2 onions in a food processor, and then to the frying pan we added 2 cans of black beans, and no we did not drain them we want the liquid, and added some paprika, pepper, cumin and garlic and cooked this till the beans were nice and hot.

Phase 4 Chipolete Mayo

In a food processor we added 3 cans of chipotle peppers in adobe sauce

In a bowl with your now pureed chipolete we added some lime juice, mayo (no miracle whip guys, please.) some sour cream, apple cyder vinegar mix well.

Phase 5 Plate

I would take a huge plate, and a very small bowl, in the small bowl put your mayo in and set in the center of your large plate, and then add every piece of the meal and display well

This is a great meal, you can make guacamole and add lots of different things to it, make it your own, burrito bowls are an amazing treat, and yes they do take some time to make, but its worth every moment, I know my wife loves it!

Trashy Aimee’s Nachos

Nachos are a great snack, something easy and simple to eat, and very tasty! This is something you should have out to entertain your friends and family when over, not only tasty but quite healthy too.

Phase 1 Cheese Sauce.

  1. Lets build a rue.
  2. Put some butter oil in a pan, and then add 1/2 cup of flour, and mix that in.
  3. Add some milk in.
  4. Add some very thin cut onions, if you use a food processor it would work best.
  5. Add some minced up garlic, make sure you are mixing this in real well.
  6. Now start adding in pieces or chunks of velvita cheese, (you can use real cheese if you want, we wanted to try velvita once.
  7. Add more milk if needed.
  8. Put some cracked pepper in.
  9. And finally add some jalopino and keep on mixing until the cheese and everything is mixed well, and take off the heat.

Phase 2 Veggies.

Veggies are totally your choice, cut them up and cook them down a bit so they are a bit soft and not too crunchy cut them and cook them, we like jalopino, mushrooms, olives, onions, a celery, green and sweet peppers.

Phase 3 Serving.

Take a baking tray, (maybe tin foil or parchment paper on the bottom, line it up with your favorite nacho chips, cover evenly with your veggies, and then your cheese sauce, you can also add protean if you want, not necessary, but you can!

This is a super easy dish to make, very easy, and customizable, you are in 100% control, maybe you want more veggies, or maybe less, its all on you! You choose what type of cheese you want, this should taste great, and should be a good dish to serve!

Breakfast Burritos

This is a super simple and easy recipe, and can honestly taste amazing and can give you a great start of your day for breakfast!

Phase 1 Ingredients.

  1. Italian assuages
  2. Cheese
  3. 4 eggs
  4. Green onions
  5. Green Pepper
  6. Jalopinios
  7. Red peppers
  8. Onion
  9. Salsa
  10. Tortillas

Phase 2 Prep.

Cut all your veggies, if you don’t want your burrito to be too hot, remove the seeds from the jalopino

Cut the sassuages down super small pieces.

Phase 3 Eggs.

Take your eggs and put them in a bowl and scramble them with some pepper and some grated cheese, (By the way grate it yourself, don’t buy it pre shredded.) set this aside from now.

Phase 4 Cooking.

Start by cooking your sauces, make sure they are fully cooked, then set them aside.

Cook your scrambled eggs up nice and then set them aside.

Cook your veggies up and set them aside, were almost ready guys!

Phase 5 making the burrito!

Open a tortilla up, and then spread a bit of salsa over it.

Put some scrambled egg over it, then some assuages, and then finally some veggie mix.

Finally some more salsa, then wrap it up, and your good to go.

This can be a very easy and healthy meal, super tasty super fun to make and eat!

Pineapple and Chipotle Salsa

This is a great and easy salsa to make, tasty, hot, and flavorful, and best yet, you can make this for a party and have a large amount, and you can be proud of this one as most people won’t make this much effort, or buy their own, this is tasty healthy, and fun!

Phase 1 Ingredients

  1. Chipotle and Adobe Sauce.
  2. 1 Large Onion.
  3. 1 Sweet Pepper.
  4. Some Cardimon.
  5. 3 Cloves of garlic.
  6. 1 Can of tomatoes.
  7. 1 Can of Pinapples.
  8. Some minded ginger.
  9. Some Tajin.
  10. Lime Juice.
  11. Mexican Oregino.
  12. Lo-Salt.
  13. Smoked Paprika.
  14. Cumming.
  15. Black Pepper.
  16. Hot Peppers.

Phase 2 Into the Food Processor

Ok there are some things that need to be processed first, after your done processing the items throw it directly into your blender.

  1. Onions.
  2. Sweet Peppers.
  3. Cardimon.
  4. Garlic.
  5. Pineapple.
  6. Chipolete in Adobe Sauce.
  7. If your using fresh Ginger, do that too.

Phase 3 Blend Blend Blend

Simply put everything into the blender, and you may have to do multiple runs to get it done, if so just put everything into a bowl after a blend, and mix everything well when its done.

Phase 4 Containers

You want to start putting this into containers, and leave it sit in the fridge for at least an hour, and your done!

This is best served with nacho chips, or you can use this with tacos too.

This is an excellent and tasty salsa, and I promise you, everyone will be impressed with you, and think you made the best salsa ever! Your welcome!

Pink Tacos

Pink Tacos are a great healthy, yes it takes a lot of work, but its well worth the effort, and it is a big way to impress someone with your cooking skills as no one else could imagine taking the time to make, and honestly it tastes amazing!

Ingredients

  1. Cranberries
  2. 3 Cups of water
  3. Cinnimon
  4. Orange Juice
  5. Orange Peels
  6. Hot sauce
  7. 1 Jalopino
  8. Celantro
  9. Can of Mandrines
  10. Can of Peaches
  11. Can of Appricots
  12. Chunky pinapple
  13. Tajin
  14. Lime juice
  15. Fresh Tuna
  16. Salt
  17. Pepper

Phase 1 Cranberry Salsa

  1. In a pot put a bag of cranberries in on medium heat
  2. 3 cups of water
  3. Add some cinnimon
  4. Add some orange juice
  5. Add some peels of some oranges
  6. Add some hot sauce you enjoy
  7. Let simmer for 30 minutes
  8. Remove 75% of the cranberries and blend them, and then combine them and let them sit in the fridge for a while.

Phase 2 Tropical Salsa

  1. Remove the liquid from the Mandarins the peaches, the apricots and pineapples
  2. Add them to a food processor
  3. Chop 1 Jalopino (remove the seeds if you don’t like heat) and add it to the food processor
  4. Add Tajin to the food processor, process the mix, add lime juice and set aside.

Phase 3 Fresh Tuna

  1. We like using fresh tuna for this, its got a great taste and also much healthier
  2. Marinate the tuna with a bit of oil salt and pepper
  3. Cook the tuna the same way you would as a steak just sear it, you don’t want to fully cook it.
  4. Let it rest for 10 minutes, if you don’t the juices and flavor will escape.
  5. Cut it up in very small pieces.

Phase 3 Putting it all together

  1. Where going to get some pink taco shells, (if you can get pink ones, some times there is a lot of false advertising and you don’t get them.)
  2. Start by putting the tropical salsa on the bottom.
  3. Line the next layer up with your tuna.
  4. Finish it up with your cranberry salsa.
  5. Serve it.

We found this to be absolutely delicious and tasty and had so much flavor, and tasted so amazing, when we served it everyone was amazed and surprised, they were first shocked by the name we called it, but in the end, it won them over.
