BBQ Chicken Pizza

BBQ Chicken Pizza just happens to be one of my wife’s favorite pizzas, she really enjoys it,. a lot, so this is one I end up making a lot for her.

Pizza is fun to make, you can buy your crust, you can make it, and I would encourage you to get a bread maker, with the price of bread these days making your own would be so much more simple and cheaper, and making pizza dough is so much easier that way.

In this recipe I’m going to let you choose how you want your own dough, I did not include a dough making recipe as I use a bread maker, and I’m aware that not everyone does.

So lets take some chicken breast chunk it up and start cooking with it, use any spice you want, its more your taste, you can make it hot, or not the choice is yours, Make sure your using some BBQ sauce as you cook it. I would say no salt, and use pepper and garlic to it.

Make sure your chickens is fully cooked.

At this time I would go ahead and pre heat your oven to 500 degrees.

Now on your pizza dough, add a layer of BBQ Sauce, now this sauce should be something you really enjoy a good flavored BBQ Sauce will go a long way instead of just a cheap flavorless one, we are not going to be using a tomato based sauce for this just a BBQ Sauce so lets make it good.

Put your chicken over it so there is a good coverage of it.

Add some chopped up onion green pepper and mushrooms over it.

And finish off with some nice shredded cheese (Please shred this your self, pre bought is not healthy and also more expensive so its not worth the money.

When the oven is done pre heating, bake the pizza for 20 minutes, or when nice and golden (Keep an eye on it, every oven is different.)

Thats it, let the pizza cool a bit before digging in, give it at least 5 to 10 minutes, then cut it up and enjoy.

Sausage Party

The sausage party is a great treat in the summer, instead of having a crappy hotdog, lets make a sausage, made just right, easy simple, but yet tastes amazing!

Phase 1 Boil The Sausages

Choose your sausages, you can get many different flavors at your local grocery store, but choose the ones that look good and think will taste good, start by taking a pot and boil some water, when the water is boiling start to boil your sauces until they are cooked.

Phase 2 Chop some veggies

I like Onions Red Peppers and Mushrooms, give them all a good rough chop, simple as that.

Phase 3 BBQ Sauce

We could use a simple store bought bbq sauce and it would be easy and done with, and please feel free to if you want, but we like to make things a bit more complicated as it tastes better and youll have a better reward at the end.

In a bowl mix in.

  1. Chinese BBQ Sauce.
  2. American BBQ Sauce.
  3. Dijon Mustard (You can use yellow if thats all you have.)
  4. Rice Wine Vinigar.
  5. Apple Cyder Vinigar.

Mix this well and set aside!

Phase 4 Cook the Veggies.

Cook your veggies down so they are soft but not caramalized.

Phase 5 Re Cook The Sausages

Take the sausages out and slice them up then mix them in with the BBQ sauce, and then fry them up till they are done, nothing to complicated here, you want them to be grilled good.

Phase 6 Fill The Bun

Take a larger hotdog bun, and put your sausages inside it, and then fill with some veggies, you shouldn’t need condiments on this as the BBQ sauce should still be dripping over the sausages that it should do the job fine, and your done!

This was short and sweet and simple, it doesn’t take a whole lot to do this and it tastes amazing, you can serve this with corn on the cob and some fries! You can add cheese on top if you like as well!

Baked Beans

Baked beans is a very Atlantic Canadian dish, it can feed a large family, its very easy to make, and can be a great comfort food, and is totally worth making.

Please note that when making this you do want to add bacon, use the lower fat version if you can, and please use the real Canadian bacon like this.

Not the round stuff that is often labeled as Canadian bacon, its not.

It is best to use a slow cooker for this, and plan plenty of time ahead because you do need to soak your beans.

Phase 1 Soak your beans

You want to buy a bag of navy beans and put them in a large container and soak them over night, and this is something that you have to do, do not rush this, it should be soaked no less than 8 hours, preferably 12.

Phase 2 Boil

Take your beans and drain and then rinse them off, clean out any bad ones and disregard them.

Boil them for 30 minutes on medium heat.

Phase 3 Making the beans

Ingredients

  1. Pepper
  2. 1 Cup of warm water
  3. Salt
  4. Cloves
  5. All spice
  6. 1 container of molassis
  7. 1 Cup of brown sugar
  8. Yellow mustard
  9. 2 Diced onions
  10. Maple Syrup
  11. Bacon

Into the slow cooker

  1. Lets put the beans into the slow cooker
  2. As you add things in to the slow cooker stir things very evenly.
  3. Take a large measuring cup, add 1 cup of warm water and then add some pepper, salt, cloves, all spice mix well.
  4. Add the mixture and stir.
  5. Add more water until the beans are almost submerged, but not over the beans just under.
  6. Add 1 cup of brown sugar
  7. Add one small container of molasses, make sure to drain it, it can be a real pain to do.
  8. Add a good amount of mustard, a few good squeezes.
  9. Add 2 diced onions.
  10. Add some maple syrup.
  11. Add some sliced up bacon, if you want it to be crispy bacon make sure to fry it up first.

cook this on low on your slow cooker for 8 hours, if you cook this for longer thats ok to, eventually the liquid will reduce and youll end up with an amazing meal, you can top this with more mustard if you want, but what ever you do, do not use ketchup at all! You can serve this with a slice of homemade bread, and if you wish to make this vegan, thats easy just don’t add bacon, or you can always add a vegan alternative.

Corn Chowder

Corn Chowder is a simple easy meal, not at all hard, it tastes great, and so simple even a beginner can do this with out a sweat.

As an Atlantic Canadian this is a pretty staple part of our diet, I would recommend you use Russet Potatoes, as they are grown perfect for this.

Ingredients

  1. Bacon
  2. 2 cans of creamed corn
  3. 2 onions
  4. 3 russet potatoes
  5. 1 container of heavy cream (whipping cream)
  6. Celeri
  7. Black pepper

Prepping

  1. Cut up the bacon and put it in a bowl
  2. Slice up the onions, you want these to be very thin
  3. Slice up the potatoes, you want these in cubes
  4. Slice up the celery

Lets get cooking

  1. You want to use a large cooking pot for this, and your going to start by cooking the bacon on the bottom, no oil or greases, bacon produces enough of that, cook it down enough so its cooked but still to the point that its soft.
  2. Add the onion and potatoes, and start cooking them, you want them soft.
  3. Add the cans of cream corn.
  4. Keep mixing this so that its not all stuck to the bottom.
  5. Mix in some pepper.
  6. Start pouring in the milk only to the point that your getting the volume that you want.
  7. Add a lot of black pepper.
  8. Finally add the celery.
  9. Let the chowder simmer and it shouldn’t take too long, and then take it off of the heat.

Thats it, simple and easy and it tastes amazing, best served with crackers, it can be a meal on its own, or you can have it as a side dish, and should taste amazing!

Sloppy Aimees

Sloppy Aimees is my take on a Sloppy Joe, just more healthy fun, and much more tasty.

This is fun, easy and very tasty!

Ingredients

  1. 3 Onions
  2. 3 Green Peppers
  3. Garlic
  4. Ground Beef
  5. Pepper
  6. Salt
  7. Worcestershire Sauce
  8. Spaghettis Sauce
  9. Apple Cyder Vinegar
  10. BBQ Sauce
  11. Your choice of hot sauce
  12. Big burger buns

Cooking

  1. Start by chopping up your onion, green pepper and garlic, it would be best if you had a food processor and let it do it for you, more simple and a lot quicker.
  2. In a oiled frying pan start frying up that mix.
  3. Add in your ground beef, breaking it up making sure its very chunky.
  4. As it cooks down its going to reduce.
  5. Add some pepper.
  6. Add some Worcestershire sauce.
  7. Add some spaghetti sauce.
  8. Add some apple cyder vinegar, not a lot but it does help with taste and works with helping your blood sugar and blood pressure.
  9. Add some BBQ Sauce, your favorite flavor.
  10. If you want some hot sauce this is where you add it in, if your sharing the meal, think about how other people will feel about it, you don’t wanna kill anyone.
  11. Mix this all in good, and cook until done, be careful to make sure the meat is well cooked.
  12. Lastly get your but buns ready and put some mix in until it looks like a sloppy joe, but this time make it messy!

This is a meal best served with fries and maybe some veggies, a great pick me up meal, very simple and quick to make, we really hope you enjoy!

East Coast Donair

This is one of our earliest videos we filmed, it is quite old, and we will eventually be re making another video!

Donair is an Atlantic Canadian meal, one of our must haves and favorites, it isn’t the healthiest thing in the world, but you can make it healthier with a bit of work!

If you go to Canada and you order one, and the sauce isn’t sweet, then it’s not a donair, if you are in Atlantic Canada at any time you must try it, it is our cultural dish and honestly one of the best things you will ever eat!

When it comes to spices put a lot in, but for things like chili powder and Cheyenne powder, you want to watch yourself a bit don’t make it hotter than you want, some people can’t handle spice eh, I’m not one to measure spices out, just look at the volume of what your cooking and use your best judgement!

Ingredients

Meat Portion

  1. Extra Virgin Olive Oil
  2. Oregino
  3. Garlic powder
  4. Chili Powder
  5. Onion Powder
  6. Cheyenne Powder
  7. Medium ground beef or Lamb meat (you can do 50/50)
  1. Pre heat your oven for 450 degrees
  2. Oil a bread pan, or any pan you want to use.
  3. take the ingredients and mix them together and beat them together very well, you want a solid meat loaf.
  4. Put them in the bread pan, and pack it in tightly.
  5. bake for 45 to 50 minutes.

Sauce Portion

  1. 3/4 cup of vinegar
  2. 2 cups of sweetend condensed milk
  3. Garlic powder

Mix all the ingredients in a container that you can stick in the fridge, mix it well, and let it rest in the fridge for an hour!

Putting it all together!

  1. Tomato
  2. Onion
  3. Cheese (Cheddar or Mozzarella is best, but use what works for you!
  4. Pita bread
  5. (optional Lettuce)

Ok we are ready to put everything together, so first, after the meat has cooled down, we are going to slice it up good, and then re fry it with some extra virgin olive oil, just to get it nice and hot and may be a bit of sear.

This is how you want it to look, very similar to this, and often this can be hard so don’t judge yourself on how perfect you have your sliced.

Take a slice of pita, put your meat on it, then cover it with a lot of sauce, and then some onions tomato and finally shred some cheese on top of it.

You can choose to bake this on 300 for 10 minutes if you wish, I don’t myself, I eat it as is, you can add some lettuce, and if your looking to serve it with something might I suggest some potatoes, often we eat this along side of pizza, and it should look similar to.
